What is Wheat Gluten?
Wheat gluten is a vital protein extracted from wheat through a specialized process. During this process, wheat flour is hydrated to activate the gluten, and then the starch is removed. The remaining gluten is then extracted, dried, and ground into a fine powder.
Applications of Wheat Gluten:
Wheat gluten is composed of gliadins, which provide viscosity, and glutenins, which give elasticity to products. It is used as a natural protein to optimize flour, especially in cakes made with whole wheat or rye flour. Wheat gluten plays a significant role in the production of meat products such as sausages, cold cuts, and hamburgers. It is also used in pasta manufacturing, where it reduces brittleness and stickiness, enhances heat resistance, and contributes to the binding and structure of the final product. Additionally, it enriches the nutritional value of soups and sauces.
Wheat gluten is also a component of pet food and feed for livestock, poultry, and aquatic animals. Products containing this protein not only improve the visual appeal of the feed but are also easily digestible and palatable. This product is available as a cream-colored, odorless powder.
Spray-Dried Protein Starch (SPS)
Spray-dried protein starch is a byproduct obtained during the extraction of starch and gluten from wheat flour. It is produced using a spray dryer in the manufacturing process.
Applications of Protein Starch
Protein starch for animal feed is a fine, uniform powder with an off-white to cream color and a distinct taste and smell. It is rich in nutrients, including at least 8% protein, at least 70% carbohydrates, and energy content of 3200 kcal/kg. It also features low levels of ash, moisture, and fiber (minimum 1 gram), offering high durability and shelf life.
Due to its nutritional value and strong binding properties, spray-dried protein starch plays a significant role in formulating feed for livestock, poultry, and aquatic animals, helping meet their energy and protein requirements. This product is also used in alcohol production, as well as the paper and cardboard industries.

What is Wheat Starch?
Refined wheat starch is obtained through multiple purification steps after separating gluten from wheat flour. In cold water, it forms a suspension, while it remains insoluble in hot water. It begins to form a gel at around 65°C.
Applications of Wheat Starch
Wheat starch has a wide range of uses across various industries. It is commonly used in the food industry, textile industry, animal and poultry feed, bakery and confectionery, chemical industry, dairy products, and gas and petrochemical industries. In food products such as desserts, snacks, ready meals, and sauces, it serves as a thickener and binder. It also enhances water retention in processed meat products, improving their texture and moisture.
Additionally, wheat starch contributes to stabilizing and preserving the structure of frozen foods during thawing and is a key ingredient in gluten-free products.
In oil well drilling, wheat starch is used to control heat. In the paper industry, it is applied as a strengthening agent due to its adhesive and coating properties. Furthermore, wheat starch is used as a filler in pharmaceutical production and has applications in the pharmaceutical industry.
